At Lindas Cleaning Specialties we are excited to launch our blog.  Since Lindas Cleaning Specialties provides a service of a domestic nature to the Vancouver area, it seems fitting to share relevant content with you. Check back often to read about cleaning and household tips, as well as some of our favorite recipes. For all those who enjoy experimenting in the kitchen, today’s post includes a favorite muffin recipe.

Favorite Banana Bran Muffins

3 beaten eggs

1 cup brown sugar

1 cup white sugar

1 cup canola oil

1  1/2 cup buttermilk

1  1/2 cup mashed bananas

1 cup raisins (optional)

3 tsp. baking soda

1 tsp. vanilla

3 cups natural wheat bran

3 cups flour

3 tsp. baking powder

1 tsp. salt

Mix bran, bananas and buttermilk – let sit while mixing other ingredients.  Sift together flour, baking soda, baking powder, and salt.  Combine eggs, sugar, oil, and vanilla in mixer, then add bran mixture and dry ingredients. Spoon into greased muffin tins. Bake 15 – 20 minutes at 400 degrees. Makes 2 dozen muffins.

Comments: Sour milk can be used in place of buttermilk.  Stir 1 tbsp. of lemon juice or vinegar into milk to make milk sour.
